What the chain bakes its bread from

Le Pain Quotidien means “daily bread” in French. The chain of café-bakeries was founded in Belgium in 1990, and its story begins with bread: the chain describes its organic sourdough bread with just four ingredients.

The chain's recipe

  1. Flourthe base
  2. Waterand nothing extra
  3. Salta pinch
  4. Timesourdough doesn't hurry

The formula comes from the chain's history; the bread recipe of this particular location is not described in the sources.

The menu of the café at Sea Breeze has three breads — a baguette, a multigrain with raisins and a rye — and the tartines are built on sourdough bread: avocado toast and croque monsieur.

The communal table

Long — so that everyone fits

In the chain's first café in Brussels, the centerpiece became a long table made from the floorboards of decommissioned Belgian railway cars. Since then, communal tables have been placed at the center of Le Pain Quotidien cafés: strangers sit down side by side at them.

SeaLife diagram: the communal table is long so that everyone fits and narrow so that people can talk (this is how the chain describes its tables). The number of seats is illustrative.

The photo of the dining room at Sea Breeze also shows a long oval table of light wood. Around it are separate tables, armchairs by the panoramic windows, shelves with jars and the menu on a chalkboard.
